Asparagus beans (or simply asparagus) are common vegetable beans in an unripe form. It has a lot of essential vitamins and amino acids that the body needs. Many people grow asparagus on their plots. For what purposes are asparagus beans used?
Asparagus is a storehouse of valuable vitamins and microelements. It contains fiber, starch, calcium, iron, as well as a whole range of vitamins: A, C, B2, B1, B9 and many other useful substances. In addition, this variety of legumes is recommended for people with diabetes mellitus, since it contains glucokinin, an element very similar in composition to insulin. People suffering from gastritis can also cook with asparagus - it does not increase acidity and has a beneficial effect on the stomach.
Beans can be added to salads, soups, various stews and side dishes. Regular consumption of asparagus, due to its antibacterial properties, strengthens the immune system and helps protect against viruses.
When to harvest
Timing often differs in different regions of the country, but you can harvest the pods before the first frost. Basically, the first crop appears a few weeks after planting. For the middle lane, the ripening of the culture falls in July. You need to remove asparagus beans from the garden every day, in batches of the same "age". The pods must be at least 20 cm long.
It is important to remember that it is necessary to pluck asparagus at the moment of full ripeness, without waiting for hard grains to form inside.
Fresh storage and freezing
Fresh beans are stored for a maximum of up to a week (the optimal storage time is 2-3 days). Although the shelf life can be extended if you put it in the refrigerator at a temperature of about +20C. The product can also be placed in the cellar. However, freezing is the best option, since all the useful properties of the product are preserved during the freezing process. Legumes can be stored in the freezer for more than six months.
The procedure for freezing beans is as follows:
- Wash the asparagus, towel dry;
- Trim the ends on both sides, then cut the vegetable into equal pieces;
- Fold in a saucepan or ladle and immerse in boiling water for a few minutes;
